Moringa Drumstick Curry
This is one of the most flavoursome dish with authentic taste of Indian spices .This is a very healthy option to have in family dinner .
The recipe is quite different from recipe of other Indian curry .People don’t eat the skin of the drumsticks,They simply open up the drumsticks using their hands, then scrape the inside pulp with teeth. This curry is generally paired with roti, onions, rice and vegan yogurt.
Ingredients required :
• Moringa Drumsticks : 500gm
• Gram Flour : 50 gm
• Chopped Tomato : 2 cup
• Mustard Seeds : 1 tablespoon
• Cumin Seeds : 1 tablespoon
• Garlic : 5-6 cloves
• Ground Turmeric : a pinch
• Chilli Powder : 1-2 tablespoon
• Coriander-Cumin powder : 2-3 tablespoon
• Chopped Onions : 2 cup
• Salt : tastewise
• Sugar :1/2 tablespoon
• Fresh Green Coriander leaves : 1 cup
• Finely chopped Green Chilli : 1/2 tablespoon
Steps to make curry are as follows:
• Wash Drumsticks and chop in pieces according to your comfort .
• Boil the drumsticks in water and add a pinch of salt for around 5 – 10 minutes.Keep this water aside , don’t drain it.
• In another pan heat oil and temper the mustard seeds.Once the mustard seeds start to pop add in the cumin seeds and finely chopped Green chillies in it.
• Add garlic ( chopped or intact) and cook for a few seconds.
• Now Add chopped onions ,chopped tomatoes, salt, turmeric, chilli and coriander- cumin powder in pan and saute this mixture until it became golden brown in color.
• Add the boiled drumsticks into the pan (without the water). Mix and cook this mixture for 5 minutes.
• Pour 1 cup of the moringa boiled water and sugar. Cook for another 3 minutes.
• Sprinkle gram flour over the curry (don’t mix). Cover pan with a lid and cook for 4-5 minutes.
• Add fresh coriander leaves in it , then mix. Cook the mix for 10- 15 minutes with the lid on and after some time turn off the stove.
